I made stuffed portoelloo mushrooms for dinner the other night and this is how I made them. I cleaned them out and then tossed them with olive oil, salt, and pepper and then stuffed them with a sweet Italian sausage. And then I added a marinara sauce over that and then baked them at 375 for about 15 to 20 minutes. While they’re cooking, I made these goat cheesecakes with po breadrumbs that I pre-toasted. Be sure to do that or they just will taste raw. And then once I pulled out the porttoellos, I topped them with the goat cheese. And then I also did some with just plain cheese and po because my kids are just not going to eat the goat cheese. I topped with remaining panko and then popped them back in the oven for another 8 to 10 minutes and then pulled them out and served them with a side of pasta.
