
I feel like I haven’t noticed a huge difference until I see it side by side.
Recipe for my current loaves:
– 450 g bread flour
– 350 g warm water
– 100 g starter
– 10 g salt
Stretch and fold ~3 times, bulk ferment, shape and let rise again, bake at 500 in Dutch oven covered 20 min uncovered 15 min.
