My friend loved these glasses, which are custom made for the restaurant. They're very tactile!

Hot ancient grain bread, chicken butter + cultured butter

Bluefin tuna, preserved truffle, elderflower

Crab, tomato, perilla, red pepper

Scallop, carrot, roe butter, burnt chilli – some description of whey foam

Cornish hen, mushroom tart, peppercorn sauce

Victoria plumb crumble

Caramelised birch syrup tart, Cornish lemon sorbet

Handlings chocolates (I picked local woodruff, which are the turquoise middle ones)

It was 11/10, absolutely flawless.

£120 p/h + service + a teeny charity donation (they're building schools in Africa). We stuck to water since it was lunch time and my friend doesn't drink.

The floor staff were impeccable.

I said at the end of the meal that if this place doesn't have a star within a year I'll be shocked. Then the next day the M guide added it!
