
I’ve gotten into deboning whole chickens and grilling them… I love it for the even cooking… was thinking about doing this with a turkey? Most I’ve seen truss it into a roast… which would also cook evenly… just seeing if anyone has done a turkey this way.
I have a 12.5# test turkey I deboned this morning so seeing what others have done.

Cook it indirect. Put the conveggtor and a drip tray. When you get to like 150 take the conveggtor off, bring up the heat, and put it skin side down.
Spatchcock? Of course. Works really well for chicken and turkey
I love spatchcock chicken! I’ve never done this deboned. I plan to do a turkey this year, so i may try this.
Made a turducken a few years ago. About an hour and half of deboning a chicken and duck to stuff into a turkey that was semi de boned. F that. Wet brine, cook separately. Spatchcock turkey for presentation, just flip around and leave whole.
Did you pull the tendons out of the drumsticks too?
