





Learning from my escapades with the catfish, I took what knowledge I'd gained and applied it to a tilapia. Pictures don't do it justice, it's amazing.
Took some white onion, poblano, habanero, jalapeno, tomatillo, garlic and cilantro and mixed it with avocado oil, salt, pepper and some paprika and cayenne powder. Dash of rice cooking wine, some soy sauce, bit of brown sugar, then a good amount of lemon juice. Tossed all the diced veggies.
Then I cleaned my fish. It came scaled and gutted but the scaling was pretty half assed, so I grabbed that fish by the tail and used the blunt edge of a pairing knife to get what that lazy bastard of a butcher didn't. I then rinsed it thoroughly in a bath of lemon juice. Patted dry, then stuffed with half the veggie mix listed above and coated in the marinade.
Wrapped the stuffed fish in foil, threw in the oven at 225°F for 30 min.
Took the other half of the veggies and peppers and stir fried them til they started to char, then reduced with some more rice wine to make a sauce.
Once the timer for the fish went off, I took it out, opened up the foil and poured the sauce on top the closed it up again and did 20 min at 400°F.
Made a bed of rice, dumped juices and veggies in, stirred.
Viola.
