    Ha, this is almost exactly what I thought I’d make with my pumpkin this week! I was going to randomly eyeball the proportions of tofu, coconut cream, cashews, and pumpkin, heat it up with corn starch to set it, and pour it into a gingerbread cookie crumb crust. Glad to see there’s a recipe for it! Thank you!
