I've been looking for more healthy recipes and found this! Excited to explore.

I also love all the recipes in the index too. 😍

Any tips on how to modify recipes so they are more healthy? i.e. use no sodium chicken broth, sub butter for broth, etc.

    That cookbook also a version called “Fix -It and Forget-It Lightly” for healthier recipes.

    There are a whole bunch of spin offs from fix-it and forget-it including a plant based one, a diabetic friendly one, a quick and healthy one, etc.

    IMO the biggest thing anyone can do to be more healthy is to increase vegetable consumption, so I’d pick veg heavy recipes and throw extra veg in. Add some spinach or kale to a lentil soup, had two carrots to a recipe that calls for 1, add a can of white beans to a pasta dish, etc.

    There’s an entire series of those books. I wouldn’t look at it as a resource for healthy recipes necessarily, since that series is just a collection of recipes sent in from people around the US over the years. That’s not to say that you won’t find some healthy options in there, but take it with a grain of salt. As far as modifying things to be more healthy, just experiment and see what you like. I almost never do recipes as-is, and play with ingredients and mixing different recipes all the time.

    I have that book. My family’s favorite is on page 185 “Sweet Aromatic Chicken”. Also I changed it and just buy light coconut milk and add the whole can, not the 1/2 coconut milk 1/2 water in the recipe. Also the Creamy Hash Browns in page 231 are so good

    I love this book! Check out Ann’s Chicken Cacciatore. Always a winner. I never use the celery seed though. It may call for wine-I use broth.

    The Hearty Chili recipe is my go to. Leave out the bell pepper, add two cloves garlic (pressed), and a can of black beans (in addition to the kidney and pintos)

    Berenice’s Chili from that book is the only chili I make and I’ve made it for YEARS. I always get tons of compliments and it is the easiest thing ever!! Impossible to get it wrong.
