(Greek Omeletta)
A very quick omelette you can throw together in a minute. Not every meal has to have meat in it, still high in protein and the feta just makes it even more delicious and more ish. It’s one of my favorites growing up and I think you will love it 🥰
Serves 3-4 people
* 5 potatoes 🥔 cut into chips
* 1 Large zucchini
* 1 Red onion
* Half Feta block @dodoni.au
* 4 Eggs
* Salt and Pepper
* Olive Oil
Start by salting your chips and heating up a large frying pan with about 1/4 cup olive oil for frying on medium heat. (You can pour out some just before you add the eggs for less oil if you prefer). Add chips and cook them half way through flipping them often for about 5-6 minutes. Meanwhile slice zucchini thinly into round slices, slice red onion and add them both to the chips. Cook everything through until golden. Scramble up the eggs well and add crumpled feta and mix that through with the eggs. Add to the pan tilting eggs all the way throughout the whole pan covering all of the chips. Cook for 2 minutes until the eggs are not watery anymore. With a flat plate cover the pan, over the sink flip the omelette and cook for another minute on that side. Serve with a little more feta and a side salad and it’s the perfect veggo meal EVER!
Some kids would come back to a meat pie. I would come back to Omeleta, a Greekstyle potato omelette that was always so delicious every time my mom or Yaya would make it. And now I know why. There were no measurements on olive oil. More of the liquid gold, more flavor, they would say. So, here’s a beautiful omelette that is so versatile. I added sliced zucchini, red onion, and feta in the egg mixture, which melts when it cooks, and it’s just divine. Uh, if you want to make it more hardy, you can add bacon, chicken, beef, anything you like really, and it just comes together so beautifully. I hope you try it.
