🥗 Ultimate Fried Chicken Caesar Salad (Homemade Dressing + Croutons)
Dressing:

¾ cup mayonnaise

2 tbsp grated Parmigiano Reggiano

5 anchovy fillets, minced

2 garlic cloves, finely chopped

1 tbsp lemon juice (add more for extra tang)

1 tsp Dijon mustard

1 tsp Worcestershire sauce

100ml good-quality olive oil

Salt & freshly ground black pepper

Homemade Croutons:

4 cups cubed bread (any kind you love)

1 garlic clove, roughly chopped

½ tsp onion powder

25g butter

1 tbsp olive oil

Salt & pepper

Salad Base:

1 head iceberg or romaine lettuce, torn into bite-sized pieces

4 tbsp (around 30gr) shaved or grated Parmigiano Reggiano

Juicy Fried Chicken:

1 large chicken breast, sliced in half lengthwise

2 eggs (beaten)

1 cup all-purpose flour

Panko breadcrumbs

Sunflower oil (or any neutral seed oil)

Salt & pepper

🧄 Caesar Dressing
In a blender or food processor, combine olive oil, minced anchovies, garlic, Dijon mustard, Worcestershire sauce, Parmigiano Reggiano, lemon juice, mayonnaise, and black pepper. Blend until smooth and creamy. Taste and adjust acidity or salt as needed.

🍗 Crispy Fried Chicken
Slice your chicken breast in half lengthwise to create two thinner cutlets.
Set up a 3-step breading station: one bowl with flour, one with beaten eggs, and one with panko breadcrumbs.
Season the chicken lightly with salt and pepper, let it rest for 5 minutes, then dredge each piece in flour → egg → panko.
Heat sunflower oil to 325-350F or 360-375C in a shallow pan and fry each cutlet for 6–8 minutes total, until golden and cooked through.
Transfer to a wire rack and season immediately with a pinch of salt.

🥖 Homemade Croutons
In a pan, melt half the butter with olive oil. Add the chopped garlic and onion powder, then toss in the bread cubes.
Once golden, flip and add the remaining butter. Remove when crispy and golden on all sides. (Discard the garlic—it’s done its job!)

🥗 To Serve
In a large bowl, toss chopped lettuce with your Caesar dressing (it may be a little thick—that’s perfect). Add croutons and shaved Parmigiano, mix well.
Top with your crispy chicken cutlets, or slice and mix them through for that ultimate flavor hit.
