The recipe is based on one my nana always makes and it’s very versatile/ adaptable/ loose. Just use whatever you have in the fridge!

Base:
• Leeks • onion • potato chopped • carrot chopped • garlic • good quality EVOO

Body/broth:
• Red lentils • bouillon • miso • tomatoes chopped (without skins) • tomato purée • any greens you have in • paprika, oregano, thyme, bay leaf

Seasoning/ toppings:
•salt and pepper, everything bagel seasoning, chilli flakes, sunflower seeds
