
How this is ok to post here since it's not exclusively Mexican. Made linguine with two sauces:
Mexican inspired green – made from roasted poblanos (in the air fryer), cilantro, spinach, onion, garlic, chicken boullion, cream cheese, crema, y lima (topped with queso fresco).
Asian inspired red – chili crisp, gochujang (Korean pepper paste), garlic, heavy cream, olive oil, sesame oil, sesame seeds, a little parmesan, a little sugar, and a little korean beef stock powder. (Great kick of heat & flavor.)
Con shrimp sautéed in cilantro infused oil & juice. (Had serranos, but didn't add because I couldn't make both spicy with my nieces.)
And grilled chicken breast – marinated for an hour in buttermilk, pickle juice, & Adobo. Drained, then mixed with olive oil, adobe, onion powder, garlic powder, cilantro. Air fryer 375 until internal temp was 165.
