All right, I’m going to show you what we do with our calamari. What we do is we take the calamari raw and then we blanch them with a beautiful kon. A kboyon is simply water with seasoning in it. In this case, we’re putting bay leaves, lemon juice, a little touch of vinegar, onions, garlic. We let it boil and boil and boil and then when the everything is cooked, we take it out and throw it away. And then we blanch the calamari. It stabilizes the calamari so that they’re all perfect and we can identify if one is mushy or not so perfect. We ditch it.
