    I got distracted by my 18mo and my 4yo messed with my phone.

    It was a little tougher than I like

    Honestly, I go lower on loin roasts. 142F. It’s a better blend of doneness and staying juicy.

    Non sous vide recipe from America’s test kitchen cooks only to 140, I would do 137.
