
Vortex fries are fantastic: Just peel and slice your taters thin and spray them with a little oil when you put them in and again after 15 minutes. I just salt them but some of my family like to use a rub. Crunchy on the outside and soft on the inside, even will take a little smoke.
A costco blister pack of thighs (skin on, bone in) makes two rounds of cooking on the Vortex which is the exact amount of time to do baked potatoes 😉 Just wrap some potatoes in foil (rub a little butter and salt on if you got time) and toss them on the outside and against the Vortex (on your charcoal grate) before you cook your chicken. For an easy quick evening meal.
Super easy dessert: Core some apples, put a cinnamon stick in the core, pack full with brown sugar, wrap in foil, place them just like the potatoes above.
Pickle poppers are still my favorite, just replace your jalapeño with a pickle, just try it 🙂
I use a large vortex in my WSK and a medium in my 22” performer. The WSK can get MUCH hotter than the kettle with this setup and cook many things faster but also char ya quick lol.

I use a binder of Frank’s Red Hot and use Kosmos Q Buffalo Wing Dust on fresh drums and flats. Makes a great buffalo wing, without the vinegar tang (some people have an aversion to that) and without having to sauce. Add a chunk of pecan and you got a damn good meal.
Definitely stealing that great potato idea.
I use the vortex almost primarily these days for a two fire cook. Nothing beats the indirect. And the direct is like 800°, so it’s perfect for searing.
