
Ive made pickled pepper rings a few times, and I seem to recall them eventually settling (or perhaps Ive previously filled the jars more).
Ive used weights at the top to keep submerged. The peppers were very fresh.
I am not concerned about the pickling – they are properly sealed (and I eat these pretty quickly!)
I just think they look better in the jar slightly more submerged:P

Having made pickled peppers before, you’re wasting so much space. When you put them in the jar, you need to littlerly cram them in.
