I first made this olive cheese bread back in 2012 and it is still one of my all-time favorites today. You need a loaf of French bread about 14 inches long. Slice it down the center lengthwise. Scoop out some of that center so you have a shallow well, but leave a border intact. That scooped out bread perfect to make breadcrumbs with. My immediate family doesn’t really love olives, so I can only make this when we have friends over. Otherwise, I will eat the entire loaf. Half a cup of unsalted softened butter and half a cup of mayonnaise. and 1 and 1/2 teaspoons of Sriracha. Give that a good mix until it’s completely incorporated and smooth. Add in 6 oz of sliced pimento stuffed green olives and one of those really small cans of um sliced black olives that’s fully drained. Two heaping cups of freshly shredded Monterey Jack cheese and two diced scallions. Give that all a good mix and then divide it evenly between those bread halves and spread it to an even layer. Then these bake at 350Β° for 25 to 30 minutes until the cheese is melted and it’s nice and golden. And then cut into 2in portions if you’re going to be serving it as an appetizer.
