This is my favorite meal to make. You can make it anywhere as long as you have a dish and a microwave. Just chop everything up, put it in a glass bowl or dish, cover, and microwave on high for 10 minutes. When it's done, add your seasonings and give it a stir and you're good to go. When I had an office job I'd just pack all the raw ingredients into a 1000ml glass food dish with a tight-fitting lid and throw it into the microwave 10 minutes before lunchtime. While everyone else was eating greasy takeout or cold leftovers, I'd have a fresh hot meal! I've also made this in my hotel or Airbnb while traveling.

I use a flexible formula:

  • 1 serving plant protein, sliced (I usually use extra firm tofu or rehydrated dried soy protein slices)
  • 1/2 small onion or 1/4 large onion, thinly sliced (essential for flavor, won't taste good without it)
  • 1 large or 2 small tomatoes, diced
  • 1 serving of mushrooms (whatever's available, today I happened to have some fresh cordyceps but usually it's shiitake or oyster mushrooms)
  • as much chopped cabbage as you can fit in the bowl/container (use force to squash it in, it will shrink down to 1/3 its original volume when cooked)

For flavoring I use soy sauce, vinegar, black pepper, and a dash of good-quality sesame oil. I used to pre-mix my seasoning and have it in a convenient little bottle in the office fridge. When I'm at home I'll chop a little fresh cilantro or green onion to finish it off.
