I am making my lemon dill with feta couscous salad. It’s addicting. So good. First thing we’re doing is going to cook the couscous. I like to use the Israeli um pearl couscous. It’s a fatter couscous and it holds up really well in salads. Okay, so now that that’s going, we are going to start with the dressing and throw in some garlic, some quality olive oil. Locally, we have a great olive and vinegar shop called the Olive Tap. And I always get their white balsamic vinegar. I just throw it all in there, some salt, fresh ground pepper. This is local honey. And now we’re going to zest in couple lemons. They’ve been washed already. So, we’re going to add the zest of both lemons just because I’m making a double batch. Otherwise, I would only be using a single lemon. Now that we’ve zested the lemon, we are going to add squeeze in that lemon juice. Always recommend tasting as you cook to adjust your seasonings. Perfect. Oh, that’s so good. Couscous is ready. And a quick way to cool it off before assembling your salad is to just run it under cold water. We are going to add our cucumbers. These tomatoes and the dill I’m using are both from Hubers’s Market in Redcliffe. And the cucumbers are from Westland Greenhouse, just a couple blocks over from Hubers. We’re very blessed to have so many wonderful green houses in our vicinity. And I actually did change out the grid for the smaller grid because I don’t like big chunky onions in my salads. I like them to be pretty fine. To me, the more dill the better. Quite a bit in there. And our feta cheese. So now we are going to drizzle that delicious dressing on there. And then wipe up this leak. I hate cooking in a dirty kitchen. And so a lot of times my boys will say, “Mom, are you cooking? You making anything?” I said, “If you get that kitchen clean, I refuse to cook in a dirty kitchen.” And remember, I said to always taste to see if it needs the seasonings adjusted. So there you have it. Yum.
