No cooking at all in this tomato-forward pasta dish. *except definately cook the pasta~
Spaghetti ala margarita. This is a simple pasta dish with absolutely no cooking involved unless you count the pasta. We’re going to put all this in a mason jar. Delicious cherry tomatoes from the farm, olive oil, minced garlic, basil. And the key here is time. The uh clock, not the herb. We’re going to let it sit on the counter for a few hours or even better in the fridge for a couple days. Let those flavors hang out. Get to know each other. Pull it out. Important here, bring it to room temperature before you toss it with some very hot pasta. Put a little pasta water and give it a nice uh toss with some pecarino cheese. And this is very flavorful and uh and very simple. And if you like this kind of cooking and you want to get your hands dirty with us, we’re going to have a full day Italian cooking workshop. You’re going to make pasta, other classics, we’re going to do this at a beautiful place just north of Atlanta, Kuna Farm Eco Retreat. Uh it’s going to be a small group. We’re gonna sit down, cook all day, eat all night, sit outside, stare at the leaves, have a fire. It’ll be great.
