This recipe really represents the style of cooking you can find in my first book Cooking With Vegetables.

My book isn’t vegetarian although I always give the option to make the recipe veggie. I often use meat and fish like smoked bacon, chorizo, and anchovies as well as suggesting what kind of meat or fish I might have with a dish.

  1. We cook that here in the philippines in an almost same way, we just coat the eggplant with egg batter and fry, usual sauce is ketchup or soysauce with Kalamansi, then most important for us is Cooked rice

  3. Your style and recipes are cool. For me though, you're miles above many chefs/cooks because you understand vegetables can be a meal. Don't get me wrong, I love meats but, I love vegetables too, and some of them are just incredible.
