Guys, let’s make sausage and tortillini soup. And it all starts with the sausage. I’m using mild Italian. I’m going to heat up a pan and we throw it right in. Guys, I’m just going to use my little tool here to break this all up. Get it crumbled. Cook it off. We’re going to go ahead and start adding our aromatics. I put my onion, celery, carrot in just like that. I’m not going to sauté those first cuz what’s going to happen when I add my chicken stock in here, that’s going to all just absorb into that broth and break down and super flavor it. So, I have a little salt and pepper. I have some fresh oregano. We stir that in. It’s time to add that chicken stock in. Now, like I said, all those veggies are just going to break down and they’re going to release their flavor right into that broth. I add a little bit of tomato sauce in there. That’s going to be perfect. We give that a stir. We’re going to let this simmer for about 20 minutes. And we’ll go ahead and get our torillini going. What I’m going to do is just pour those in some boiling water. Cook them for about 3 minutes. And that’s all. Just a simple cheese tortillini. Then I cool them off and I wait for service. We’re going to finish the soup with some fresh parsley. One more little simmer. Guys, that’s ready. Let me show you how we serve this. It’s really easy. Just grab a bowl, load it up with some torillini, and I go ahead and put that soup right over the top. It’s going to heat those through. Again, that’s perfect. Look at that, man. What a treat.
