So every time I post on this sub, I get at least one comment that’s like: “hmm this looks kinda… beige 👀” or the classic: “where are the vegetables??”

And listen. I get it. Internet nutrition discourse has really convinced some folks that a meal is only “healthy” if it’s 8 shades of green and sprinkled with chia seeds blessed by a Himalayan monk at sunrise.

But like… sometimes brunch is beige because brunch is comfort.

Potatoes are beige. Waffles are beige. Tofu scramble is beige.

And here are my tofu scramble and vegan waffles recipes 😍

Tofu Scramble (creamy, savory, hits every time):

  • 230g firm tofu
  • 1 tbsp neutral oil
  • 1 tsp turmeric
  • 3 tbsp nutritional yeast
  • 85 mL water
  • Salt + pepper
  • 65 mL soy cream Heat oil → crumble tofu → add turmeric, nooch, water, s+p → simmer ~5 min → mash → stir cream → done.

Vegan Waffles (crispy outside, soft inside, don’t play with me):

  • 2 tbsp plant-based margarine (melted)
  • 100g flour
  • 3 tbsp sugar
  • 1/2 tsp baking powder
  • 1 tbsp apple cider vinegar
  • 90 mL plant milk
  • 10 mL neutral oil Mix dry → add wet → stir → pour in preheated waffle iron → DO NOT OPEN like a curious squirrel → wait 4–6 min → golden perfection.

Served with roasted potatoes because yes, I commit to the aesthetic 👩‍🍳🤝🍽️

    This looks grand to me, OP. So tasty. Like a hotel breakfast where you pick a little of each of your favourite things, and it feels a bit more special set out like that on a plate.

    I love beige foods. They are by and large the best foods because as you say they’re pure comfort. Pasta, potatoes, bread, beans, grains, cauliflower – what’s not to love?

    Your tofu scramble looks great. And there’s plenty of non-beige with the apple, avocado and fig. I need me a waffle iron too as that recipes sounds fantastic. Your beans look really tasty too. Glad you added potatoes to both dishes to top it off!
