    What is the purpose of the rack? Why can’t they just go on the grates? Are grill marks suddenly undesirable?

    I have never seen this method, but instantly like it. I would have to try it out. In theory it seems better but would have to practice. If all are the same size, it seems like consistency wouldn’t be much easier with time and temp cooking.
