
I haven’t been to my local deli in a while, and I am happy to see they brought back my favorite salad.
The salad has farro, walnuts, dried cranberries, roasted butternut squash, arugula, walnuts, and smoked chicken. In. A balsamic vinaigrette I think.
I added some endives tossed with lemon and olive oil, some rotisserie chicken to boost the protein, and pumpkin seeds.
Golden kiwi on the side.
