Take a whole head of garlic and slice off about 1/4 in from the top, exposing the cloves. Place the garlic on a small piece of foil. Then, drizzle about 1 tsp of olive oil over the exposed cloves. Wrap it up tightly and roast for 30 to 40 minutes until soft and golden brown. Once your roasted garlic is cool enough to handle, squeeze the soft cloves into a food processor. Add 1 15oz can of drained and rinsed chickpeas, 1/4 cup of tahini, and the juice of one large lemon. Next, pour in 2 tablespoons of olive oil and half a teaspoon of salt. These ingredients form the creamy base of your delicious hummus. Now, secure the lid on your food processor and blend the mixture until it becomes incredibly smooth and creamy. This might take a few minutes, so be patient. If the hummus seems too thick, slowly add 2 to four tablespoons of cold water, one tablespoon at a time, until you reach your preferred consistency. Don’t forget to taste and adjust the salt or lemon juice as needed. Your homemade roasted garlic hummus is now ready to enjoy. Spoon it into a serving bowl. Then drizzle with a little extra virgin olive oil and sprinkle with some paprika for a beautiful finish. Serve with warm pa bread, fresh vegetables, or your favorite crackers.
