Decided to try out Claire's challah recipe. I'm fairly happy with how it turned out but I wish I had let it proof a bit longer before baking (let me know what you think). If I made it again, I think I'd add a bit more salt. I recommend using a nice dark raw honey, as I felt that's where most of the flavor comes from. Making the six-strand braid was really fun and I recommend you give it a try if you haven't!

    This looks gorgeous!!! Your braid is immaculate – how did you get the pieces so even? I make challah all the time and that’s my biggest challenge even after years of doing it 😅

    Your proofing looks good to me, but maybe you could push it further. Challah is meant to be so pillowy and light which requires a ton of time to rise. Your braid definitely doubled in size but I would try letting it go another 20ish minutes and see if it gets that real “cloud” texture when baked. I also have seen massive benefits from doing all rises in a 25 degree Celsius oven (tho my Vienna flat might just be cold otherwise).
