I set out aroreio rice, porchini, stock, butter, parmesan. Pan on high, olive oil shimmers. I toast the rice. It crackles. White wine in. Steam blooms. I ladle hot stock. Stir to silk. I sear mushrooms with garlic and thyme. I fold the mushrooms into the risoto. Butter, parmesan, truffle oil, glossy finish. I plate, taste, grin. My favorite dish.
