i think it’s more the consistency of the frosting that is causing it to not come out as you expect it to look. i think once you fix the frosting to be less soft it will pipe beautifully.

It actually looks really nice! I think a stiffer frosting consistency would help to get those sharp looking edges, but really a lot of what looks great in the first pic is just photo setup/food styling. Lighting, background, angle, pretty cake stand.

Take a long straight knife and put it in very hot water wipe it off and sharpen up the edges. Take out the middle flower it just looks crowded. Put a few leaves in between the flowers then it will look very close to the picture. You did way better than you think.
