# Ingredient List
– [ ] 2 tablespoons olive oil
– [ ] 100g Spanish chorizo, cut into bite-sized pieces
– [ ] ½ large yellow onion, rough chop
– [ ] ½ red bell pepper, cut into bite-sized pieces
– [ ] 2 cloves garlic, finely chopped
– [ ] 1 cup canned diced tomatoes
– [ ] 2.5 tsp paprika
– [ ] 200g boneless skinless chicken thighs, cut into bite-sized piece
– [ ] 2 cups spanish bomba rice
– [ ] 2 cups shrimp stock
– [ ] 300g vannamei prawn, de-shelled and de-veined
– [ ] 200g white Asari Clams
– [ ] 200g mussels
– [ ] 1 lemon cut into wedges for serving
– [ ] fresh parsley for garnish

**Shrimp Stock**
– [ ] heads and shells from 300g vannamei prawn
– [ ] 60g or ½ a chicken stock cube
– [ ] ½ large yellow onion, rough chop
– [ ] 1 tbsp saffron
– [ ] 4.5 cups (1L) water
