Spinach with Lentils

Ingredients :
Spinach- 3/4 th lb ( 340 gms )
1/2 cup brown lentils
1/2 cup chopped onions
12 grape tomatoes1 tablespoon olive oil
2 cloves garlic minced
1/2 tsp turmeric powder
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp chili powder
1/2 cup grated coconut ( optional )
Salt to taste

Method:

Bring water to boil. Blanch the spinach for 20 seconds. Drain and let it cool.
Once cool to the touch chop the spinach and keep aside.
Wash the lentils and boil till the lentils are soft , about 15- 20 minutes. Drain the water.
Heat oil in a pan. Add the minced garlic and cook till slightly brown.
Sauté the onions until translucent.
Add the turmeric, cumin, coriander powder , chili powder and mix for 1 minute
Add the boiled lentils and mix well.
Stir in the tomatoes and spinach. Add salt to taste and sauté for 2 minutes.
Finally add the grated coconut and stir for 1 minute.
Enjoy this as a side dish for rice, roti or with any meal.
