Nothing beats a juicy, well-cooked steak. When you’ve got a quality piece of meat, you don’t have to dress it up with complicated cooking techniques and extravagant sauces, and that’s precisely why it’s widely loved. So why is cooking a steak so difficult?
From a tragically grey exterior to an overly cooked inside, there are many ways to go wrong. When cooking a “perfect juicy” steak, that’s “tender” and has a “great caramelised flavour”, trained French chef Joel Mielle from food blog Recipe30 holds an “amazing” recipe. He recommends holding off on adding pepper to the steak as the hot oil will “scorch the pepper, killing the aromatic flavour”. He said, “There are a hundred ways to cook a steak, but for me, this method has always given me amazing results.”
How to cook the perfect steak
Ingredients
10oz sirloin steakTwo garlic clovesOne sprig of thymeFour tablespoons of avocado oilOne tablespoon of butterSalt and pepper, to taste
Method
Start by removing the steak from the fridge and letting it warm to room temperature for approximately 20 to 25 minutes.
Next, add three tablespoons of avocado oil to a very hot frying pan. Heat the oil before adding the steak, and place it carefully away from you to avoid any oil splashing. Sear for approximately one minute.
Then, flip the steak over, add the rest of the oil and sear for one minute. Add salt and flip again; cook for an additional 20 seconds.
Add salt on the other side, and after 20 seconds flip again. Continue flipping for another two or three times, depending on how you prefer your meat cooked.
Joel urged: “Never poke, probe or push your steak while cooking, that’s the sure way to make it dry.”
After, turn the heat to very low and add the butter, thyme and crushed garlic. Mix the steak in the juices and baste all over with a spoon.
Make sure to check the temperature to see if it’s to your liking, or keep flipping and basting as needed.
Once ready, turn off the heat and place the steak on a warm plate to rest for five minutes. For the final step, add cracked pepper and serve.
