


I had a pack of Trader Joe's Soy Chorizo that I wanted to use up so I made Soyrizo and cheese empanadas! I underestimated the ratio of veggies to chorizo that I would need so I had to buy another pack of soyrizo for the recipe but ended up using only half of the cooked mixture for the empanadas. Which I didn't feel like making more dough so that's a problem for future me. McCormick also has a holiday line of seasoning packs so I got the green bean casserole one, I might have added too much milk because it was kinda soupy but good!
Soyrizo and Cheese Empanadas
– Dough
3 cups of all purpose flour
1 tsp salt
1 tsp baking powder
1/2 cup butter
3/4 cup water
1 large egg
– Filling
Oil spray
1 yellow onion diced
2 green bell peppers diced
1 red bell pepper diced
3 jalapeño peppers diced
5 cloves garlic minced
24 oz soy chorizo
1 tbsp tomato paste
1 tsp dried oregano
1 tsp ground cumin
1/2 tsp smoked paprika
~1 cup sharp cheddar cheese shredded
~1 cup Monterey Jack cheese shredded
1 egg + splash of water for egg wash
Green Bean Casserole
1 green bean casserole seasoning pack
2 14.5 oz cans of green beans
1/2 cup boiling water
1 cup milk
Fried onions
Zucchini Banana Baked Oat Cups
2 bananas
1 cup plain yogurt
2 large eggs
1/2 cup maple syrup
3 tbsp butter
2 tsp vanilla extract
3 cups rolled oats
1 tsp ground cinnamon
1 tsp baking soda
1/2 tsp salt
1 zucchini grated finely
