I make something similar with pretty much any vegetable. I use a similar weight of potatoes to the vegetable of choice because I find it helps the texture but doesn’t overwhelm the flavor. I cook a bit of onion and garlic first, then add veggies and water and boil. Add cream at the end to taste.
