Hi everyone! Join me as I make these crispy and delicious balls made with eggplant. I’m using Italian eggplant that weighs around 500 grams. You can use any type of eggplant you like. First, let’s remove the stem, then slice it lengthwise or into rounds. I’m using a bread or serrated knife because it’s easier and safer to cut smooth-skinned vegetables or fruits like eggplant and tomatoes the knife won’t slip. Next, cut them into cubes about this size. It doesn’t have to be perfectly even. Some people don’t like the eggplant skin, so if you prefer, you can peel it. Finely chop 2 cloves of garlic. Once everything is ready, turn on the stove and let’s start cooking. Add good amount of olive oil sa pan. Saute our garlic. Once it becomes fragrant, add your eggplant. Season with salt to help draw out its moisture. Stir well, cover, and cook until the eggplant becomes soft over low medium heat. You don’t need to add too much oil to soften the eggplant just enough . Once the eggplant is soft, transfer it to a large bowl and let it cool slightly. If it’s too watery, drain the liquid before transferring it. Let’s chop our fresh parsley if you don’t have fresh you can use dried or you can use cilantro or any herbs or any spices you like. Mash with fork or hand blender. Now combine all the ingredients: 1 egg, 50 g Parmesan cheese, 70 g breadcrumbs, 10 g flour, salt and pepper, and fresh chopped parsley. Mix to combined. If the mixture is too wet, add a bit more breadcrumbs. Next, prepare the breading. You’ll need 2 beaten eggs and some breadcrumbs. Form the mixture into small balls. If you like, you can add a small cube of mozzarella in the center. put in the egg, then transfer to breadcrumbs and coat completely Place them on a plate and repeat until all are done. Drizzle a bit of olive oil over the balls and bake in a preheated oven at 200°C for about 20–25 minutes. (180-200°C) Second, by pan-frying. Heat the oil in a pan, and once it’s hot, carefully add the balls. Cook until golden brown on all sides, moving them around so they don’t burn. Once they’re beautifully browned, remove and place them on a paper towel to absorb excess oil. See? So healthy, delicious, and easy! for appetizer, snack or main dish. While still hot, sprinkle with salt. They’re perfect with a few drops of lemon on top. You may also cook this with tomato or
marinara sauce. Let’s do the taste test. hmmmm delicious (Buonissimo!) If you prefer a healthier and less greasy option bake them in the oven instead.
