I know, I know, I just butchered two traditions (cajun and italian) at the same time, but I work 50+ hours per week, and I don't have the cognitive energies to cook my own meals like I was some sort of restaurant chef. Also this really worked, so who cares?

I believe that home cooking must first of all feed you, and it should also be tasty (at lest not boring/depressing) and somewhat healhty, without getting too obsessed over it.

Ingredients:

  • 100-150g minced chicken thigh/breast (I used a chicken burger, here in Italy it's very common, but minced chicken it's pretty much the same thing)
  • One frozen pizza (I used a gluten free one cause I'm on a low fodmap diet)
  • 50-70g grated parmigiano (or any other grated cheese you like)
  • 1-2 tablespoon(s) of literally any oil
  • any dried herbs or spices you think will go well with this recipe (I used cumin, chili flakes, paprika, tyme and dried chives)

Steps:

  1. preheat the oven at 375 deegrees F / 200 degrees C or follow your pizza's package instructions
  2. preheat a non-stick pan with a tablespoon of any oil you have (I used olive oil) on medium-high heat
  3. put in your chicken and sautee it for roughly 3 minutes
  4. after 3 minutes, pour a couple of tablespoon of water over your chicken (this will create steam and it will make it cook it properly without too much browning). Keep cooking until 90% cooked (it will finish cooking inside of the oven), which means roughly 2 more minutes.
  5. lay the chicken over your frozen pizza, add the spices and parmigiano and spray some water all over the top to prevent excessive browning (you can also dip your finger in a glass of water and let the drops of water fall over the pizza)
  6. cook your pizza in the oven for roughly 10 minutes (or follow your pizza's package instructions). I prefer cooking it in the second lowest rack to prevent excessive browning, but you know your oven.
  7. Let your pizza rest/cool for 5 minutes.
  8. Enjoy!
