
Tofu
• 1 block firm or extra firm tofu
• 3 to 4 tbsp cornstarch
• 2 tbsp neutral oil
• Pinch of salt
Sauce
• 3 tosp soy sauce
• 2 tbsp rice vinegar
• 1.5 tbsp sugar (or maple, honey, brown sugar)
• 1 tbsp hoisin
• 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
• 1 tbsp sesame oil
• 2 cloves garlic finely chopped
• 1 inch ginger finely chopped
• 1 to 2 dried chilies or 0.5 tsp chili flakes
• Optional handful peanuts
• Optional splash of water if too thick

I’ve made nearly the exact recipe and it hits every single time with a little bit of jasmine rich and a cup of miso soup on the side!
What chile do you recommend? I’m guessing Thai/bird’s eye?
