Ingredients
rotisserie chicken, meat pulled and shredded
2 tablespoon butter (optional, for extra richness)
1 small onion, diced
2 celery stalks, diced
2 cloves garlic, minced
4 -5 cups chicken broth (plus more as needed)
1 (10.5-ounce) can cream of chicken soup
1 (10.5-ounce) can cream of celery soup
1 bay leaf
1/4 teaspoon poultry seasoning (or a mix of thyme, sage, and pepper)
6 -7 soft flour tortillas (fajita or taco size), cut into strips or small squares
Optional: ¼ cup heavy cream or milk for extra creaminess
Directions
In a large pot, melt butter and sauté onion and celery until softened. Add garlic and bay leaf and cook for 30 seconds.
Pour in chicken broth, then whisk in cream of chicken and cream of celery soup until smooth.
season, poultry seasoning, garlic powder, salt, and pepper. Bring to a gentle simmer.
Cut flour tortillas into strips or squares and drop into the broth a few at a time, stirring gently.
Simmer 10–12 minutes until soft and tender.
Stir in shredded rotisserie chicken and cook 5 more minutes. Remove bay leaf. Tasts and adjust seasonings
Add a splash of heavy cream if desired, and serve warm. Thanks for watching 😘

Come on in. Come on in, y’all. We all love those old school chicken and dumplings like grandmama used to make, but sometimes we just don’t have the time. So, today I’m showing you my lazy shortcut version that still has that good oldfashioned flavor that we all love. And you know, I’ll show you how to put it all together. Y’all know what this is. Take off. Here we go, y’all. Let’s get started. We’re going to go ahead and go over the ingredients. To keep this simple, I’ll be using a rotisserie chicken. To make it nice and flavorful, we’re going to add in some celery, onion, garlic, and a bay leaf. I’ll be using a can of cream of chicken and a can of cream of celery. We have some chicken broth and some butter. And that special shortcut ingredient, and a full list of outer ingredients will be down below in the description box. Let’s make it. All right, y’all. To get started, we’re going to add in a touch of oil and some butter. Get that nice and melted. Then go ahead and add in your onions and your celery. Going to go in with a touch of pepper and some salt. Go ahead and give that a mix. And we’re going to let these cook for about 5 minutes. Y’all use those leaves on that celery. The leaves do have some flavor in them. Okay. So, after about 5 minutes, we’re going to go ahead and add in that garlic and the bay leaf. Let this sauté in for about 30 seconds. Now, we can go in with our chicken broth. and your cream of chicken and cream of celery. If you just want to use cream of chicken, that’s fine. Just a touch of poultry seasoning and some nature seasoning. Not too much. Just be mindful of your salt because the cream of celery and the cream of chicken has salt in it. So, just be mindful. We’re going to come in and go ahead and give this a mix. Get this nice and smooth. And you want to let this come up to a boil before we add in that secret ingredient. Y’all stay with me now. Now for that secret ingredient, flour tortillas. I know some of y’all are thinking right now, “Ooh, April, no, that is not it.” But listen, tortillas have that same soft doughy texture like the homemade dumplings, and they both use flour. Is this grandma’s dumplings? No, it’s a shortcut. Trust the process though, y’all. Trust the process. Now, once your broth is boiling, you can go ahead and add in the tortillas. I just use my pizza cutter and cut them into squares or you can cut them into the size that you like. Once you add in about two to three handfuls, just go ahead and just give it a slight little press down. Just give it a slight little mix. You don’t want to do it too hard, but just a little slight little press and a slight little mix. And then just go ahead and add in the remaining tortillas. And the same process, just give it a slight little push and just stir it gently. And we’re going to let these cook for about 12 minutes. Coming in periodically and just giving it a gentle stir. After about 12 minutes, let me show y’all what it’s looking like. This is what it’s looking like. The tortillas are getting nice and soft. Now you can go ahead and add in your rotisserie. I did season up my rotisserie. Adding in those juices from the rotisserie also. Give us a little gentle mix. It’s looking good, smelling good. Now, you want to let this just simmer for about five minutes. Let that chicken heat back through. And that’s it. And that’s all it is to it, y’all. You can go ahead and remove your bay leaf, taste, and adjust your seasonings. A cozy bowl of comfort without all the work. This is a good recipe! I like to cook the tortillas a little longer so they swell up more. Tortilla dumplings taste and texture is very good.

I do same thing EXCEPT, instead of tortillas, i buy can of sweet sue dumplings and i use knife to cut them in smaller pieces and add them to pot. Everyone thinks you made from scratch.
I sprinkle a little of flour on the tortillas, helping to thicken it up a bit

I like putting chicken in, then adding strips of tortilla lattice across the top. Mash in but "do not stir". Cover with a lid? Mother told me that is how the enslaved made it, only they used their own dough.

Sounds and Looks awesome! Gonna give it a try soon. But I Think, instead of using a tortilla shell (nothing wrong with that for sure), but I think, I'm gonna try using a Pita bread instead. It's a little bit thicker and heartier (slightly more doughy) in my opinion. But that's the beauty of cooking recipes. You can take a Great one like this, and modify it to your personal liking.
