Smoked and charred Roma with Jalapeno, Serrano, Onion and Garlic, 8 cups worth. – 4 lbs Roma – 6 Jalapenos – 4 Serrano – 1 Med Onion – 1 Hd Garlic – salt to taste
Jalapenos deseeded and everything cut up. Smoked 90 min, charred about 5min in grill, blended on pulse when cool enough to touch.
Roasted Arbol and Tomatillo salsa, 3 cups worth. – 1 lb Tomatillo – 10 gr Arbol – 2 Guajillo – 3 Cloves Garlic – salt to taste
Peppers deseeded and charred with garlic a few min on med heat, transferred to a pot with just enough water to cover and heated to a boil then simmers for 20min. Tomatillo continue to char until soft and splitting. Everything transferred to blender with 1/2 cup pepper water. Blended until smooth.
