bienvenidos and welcome to another episode 
of Spain on a fork so we’ve made it to august truly the dog days of summer as it’s almost 
impossible to beat the heat and I tell you during these times there’s nothing better 
than making dish that requires no cooking on the stove top and it fills you with so much 
goodness anyways today that’s exactly what we’re doing we’re making a creamy cucumber tomato sandwich and let me tell you this sandwich is filled with so many simple yet delicious flavors
It’s made with basic heart-healthy ingredients and the best part it’s all done within minutes
folks serve this sandwich next to a handful of chips and a couple ice cold beers more specifically
estrella damm from Barcelona you’re gonna have yourself the best moment in your day really quick before we 
start a shout out to a couple of my patreons Jim Schallert and Barbara Eastman again guys thank you so much for being patreons of Spain on a fork you know how much I appreciate you alright 
let’s just dive right into this I’m going to add in a 5 oz container of plain Greek yogurt into a large bowl which is 150 g I’m using low-fat but you can also use full fat non-fat or even a plant-based one to easily veganize this recipe we’ll also add in 1 tbsp of Dijon 
mustard which is 15 grams finely grate in two cloves of garlic as always if you don’t 
have a grater you can just finely chop them 1 teaspoon of dried dill which is 1 gram and squeeze in 1 tbsp of fresh 
lemon juice which is 15 ml then we’ll season with sea salt and 
a generous portion of freshly cracked black pepper and like i’ve told you in the past that black pepper brings out an incredible flavor in the yogurt and we’ll give it a 
mix until it’s well mixed together once everything is well mixed I’m going to add 
in one cup of finely chopped English cucumber which is 150 grams and as you can see I’m 
leaving the skin on it as it adds more nutrients and flavors If you 
prefer you can peel the cucumber we’ll also add in 1/3 cup of 
chopped red onion which is 50 grams and two tablespoons of 
chopped parsley which is 8 grams and we’ll give it one final mix 
until it’s well mixed together for the next step let’s start prepping 
the bread I’m going to grab a couple slices of sandwich bread and lightly 
toast them I’m using multi-grain but you can use whatever bread you like but like I’ve told in the past make sure to lightly toast it that once you add that cream mixture in 
there it doesn’t get mushy and break apart to assemble the sandwiches we’ll add in some of our creamy cucumber mixture over a slice of toast thinly slice a tomato and add a 
couple slices over the mixture season the tomatoes with a kiss of sea 
salt and freshly cracked black pepper and then add some of the creamy 
cucumber mixture over the top slice of toast and place it over the sandwich and check it out folks our creamy cucumber 
tomato sandwich is done easy to make simple heart healthy ingredients
and all done within minutes let’s give this a try and see how it turned out once again folks a creamy 
cucumber and tomato sandwich I’ve cheated I already tried it I could not 
resist myself let’s give it a try again even better the second time this right here
It’s truly out of this world I just want to lock myself in the closet and eat all these sandwichesthe tomato adds the freshness and that yogurt sauce with the cucumber taking this to the next level

  3. I make such a cold sandwich with buttered fresh soft bread slices and a filling of chopped tomato and cucumber with salt and pepper powder. Too simple and tasty

  4. It's too runny.
    Suggestion: chop your cucumbers & place in a strainer. Sprinkle & mix with salt. Allow the salt to draw the extra water out of the cucumbers. (5 – 10 minutes) then pat dry.
    Do not season with salt or just use less in the recipe.
    Otherwise, it looks mmm 😋good! The dill is a good touch!
