savory mashed sweet potatoes. So, we’re going to roast them
up. We’re going to mash them up. We’re going to add a whole head of roasted garlic. We’re going to add a little balsamic
vinegar. And it’s going to be so good. We’re going to do
is coat them in olive oil. We’re going to be really
generous with the olive oil. That’s going to help them roast
in the oven and to caramelize on the sheetpan. You’re going
to take a whole small to medium-sized head of garlic and
just cut the very top of that garlic off. Place the garlic in the center
and then you’re going to drizzle it with about one teaspoon of olive
oil and sprinkle it with a little kosher salt. You’re going to wrap
that foil up around the garlic so that it makes like a little
pouch. Now, go ahead and pop this in the oven 20 minutes. Flip the
sweet potatoes over and do another 20 minutes. Now, I should probably
just be able to squeeze this and it will come right out of
the shell, which is exactly what happened. Next, you’re
going to add in one tablespoon of brown sugar. Then, you’re
going to add 1 tbsp of milk. Then, this next ingredient is a
pop out ingredient. 2 teaspoons of balsamic vinegar. And then,
you’re going to take a hand mixer and just blend this all
together. These are going to be a showstopper. Most people think
of sweet potatoes as being this overly sweet marshmallowy
brown sugar side dish and it doesn’t have to be that.
