

First time doing a rabbit on a smoker, and my first time smoking meat on a pellet smoker. It feels kind of lazy. Anyway, what do y'all think?
Dry brined in butcher paper with smoked salt and black pepper, then coated on both sides in herbs de province. The basting liquid I made was butter and balsamic vinegar, with cumin, paprika, cayenne pepper and onion powder.
The belly pic is after the initial spine up smoke. I basted the belly and let the back brown a bit before dropping temp to get it closer to resting temp.

Rabbit is so good. Never had it smoked though.
How moist was it ? Mother always braised ours in gravy. I’d think they would dry out.
That looks awesome! Pellet smokers make it so much easier, and I don’t think it’s lazy at all, it’s just using good tools.

WOW that truly looks amazing. You did a wonderful job.The dark truly in regards to my current way of thinking about myself is that at the end of the day it would be a total dream for me if I could be fully processed and prepared in that type of manner. But even though something like this would be my chosen path no one seems to have any suggestions on how to fulfill my goals to their fullest potential and conclusions. I Just wanted to let you know that I truly appreciate how you smoked that Rabbit. I hope that you’re doing well tonight and don’t mind my message. I didn’t mean any type of disrespect to you or anyone else in any way at all. But if possible would love to hear back from you regarding any tips or suggestions you may have on my current situation.
