Weber charcoal, 2-zone method – brought it up to 117°, rested it, and seared on the coals. Served with mash and sautéed white mushrooms.

Used the leftovers to make a steak sandwich with arugula, roasted garlic aioli, and caramelized onions.

    Reheating steak is a tricky, tricky business. Original cook looks amazing. The steak sandy does too, but obviously it made its way up to med well. Nothing you could do to avoid tbh.

    EDIT: yes, you can sous vide 5 oz of steak the next day for sandwich and avoid cooking it more, but you can also throw it in a pan or the microwave like I do and accept defeat

    Looks like perfection. The reheat took it to a medium, but I’d still eat the living shit out of it.. especially with the caramelized onions.

    Those onions are on point. Takes forever to make good caramelized onions but they are so worth it.

    How do you cook it on a high temp to get the crisp of the outside and cook it thoroughly.

    I suck at cooking any type of steak.

    Another way to do that leftover sandwich is to dice those pieces smaller and cover them in a couple white American slices in a stainless steel pan for a crispy edged Philly cheese steak – 2-3 minutes to reheat with more surface area. – the cheese lubricates the beef that’s gone from medium rare to medium.

    To reheat, hot pan with butter,cut steak into chunks not slices, sear on one side for a min then toss them around a little to get butter all over em, add salt if needed

    excellent cook…don’t need to recook or reheat steak that well cooked for leftovers…if you want it hot, let it come to room temperature and then make everything around it hot…for example in a sandwich broil bread and cheese so it’s super hot and then add steak. or make hot beans and onions with a hot tortilla and make burritos or whatever and the the steak will maintain that mid rare texture
