Olive oil is one of the only kitchen staples I’m happy to splurge on. I use it every day, in almost every recipe, so its flavor has an outsized impact on my food. Because of this, I normally have a few bottles in rotation at the same time. I’ll use one for sautéing and roasting, another for drizzling, and an infused oil or two for topping pastas or mixing into salad dressings.

When I learned Olio Santo is Ina Garten’s oil of choice, I immediately procured a bottle of my own. She described it as “flavorful, fruity, and not heavy,” preferring its light taste for everyday cooking. After going through an entire bottle in about two weeks, I can confirm that Olio Santo is “just right,” as Goldilocks would say. With its impressively delicate flavor, you can rest assured that it won’t overpower your food.
La Tourangelle Spanish Extra Virgin Olive Oil

Made from Spanish olives, La Tourangelle’s organic olive oil is one of the brighter, bolder bottles in my pantry. I love that the package is made of tin, which does an excellent job of preserving the flavor and quality of the liquid gold inside. Pro tip: The brand’s basil oil is my secret hack when I want to add a subtle herbaceous note to my dish. I use it as the base for vinaigrettes, drizzle it over pasta, and more.
Heraclea Early Harvest Extra Virgin Olive Oil

Similar to La Tourangelle, Heraclea’s early harvest olive oil loves the spotlight. I’ve put my bottle to great use in olive oil ice cream and challah bread, loving how its peppery, robust flavor demands attention. Given its main-character energy, this oil is best used for drizzling, not sautéing.
Séka Hills Estate Arbequina Extra Virgin Olive Oil

Samin Nosrat of Salt, Fat, Acid, Heat fame swears by her bottle of Séka Hills Estate Arbequina Extra-Virgin Olive Oil. In an interview with the Wall Street Journal, she described its grassy, piquant flavor as “vibrant” and “alive.” After trying it, I agree with Nosrat. The oil inside is complex and spicy, without overpowering my taste buds or distracting me from the hero flavor in a dish. I particularly appreciate that it can shine in the forefront or blend into the background, depending on what I’m making.

Graza’s olive oils are ubiquitous in kitchens nowadays. I’m not immune to the brand’s charms, having relied heavily on its Sizzle oil for the past year or so. What I love most about this bottle is that it’s flavorless — and I mean this in a good way. I like that I can use a tablespoon or two in recipes that call for neutral oils, like vegetable or canola, without drastically changing the flavor profile of the dish. I also appreciate the brand’s new glass bottles, which preserve the quality for longer than plastic.
