Yes, to make the cut for the list, the sandwiches offered had to opt for authenticity over recipe changes, keeping in line with the Italian sandwich of the past.
For example, stores that automatically put cheese on the sandwich weren’t included on the list. However, those who offered cheese as an option weren’t barred. Nothing against cheese, but the oozy goodness of a slice of cheese just isn’t considered authentic on a true Chicago-style Italian beef sandwich.
