    At my place we take our brisket fat trim and make smoked tallow. Sell it and use it for cooking. If you’ve never made it before, it instantly elevates whatever you’re making.

    Being allowed to tallow the friers at a little cafe I worked at was the best thing ever.

    We were in an industrial area, but the tradies mostly just got pies and some chips… Until I was allowed to tallow the friers and do some wings.

    The one delivery I was always excited and hanging out for was the tallow. We got it from a nice little company who also threw us random freebies to try out as they were a BBQ company, so sauces, rubs and I got some real nice apple wood for my smoker from them after I let slip I had one and used it often.

    But I digress. Tallow is one of my favorite things. I keep some at home as I’ve moved to an air fryer, but I still occasionally crave something deep fried in white gold.

    Ive been in kitchens roughly 16 years and never really used beef tallow until recently and omfg i get it.
