Hello,We were on vacation in Japan this summer and it was great. The food was so delicious that I would love to cook many of the dishes at home.Attached are two photos with framed dishes, numbered A1, A2, etc. and B1, B2, etc.If you recognize the dishes and their ingredients, please write them here!Otherwise, I will contact the hotel and ask if they could tell me, as it was at the breakfast buffet.

    Is A3 miso seasoned okra? A4 seems like tempura.

    A2 looks like nasu agebitashi (fried pickled eggplant).

    A3 looks specifically like okra ohitashi. It’s where they simmer briefly cut okra in a dashi mixture. Sometimes it’s finished with a dash of rice vinegar.

    A5 is grated yamaimo (mountain potato) which creates a slimy soft paste. It seems to have sashimi on top. If the sashimi was flavored then it’d sometimes lightly picked in sake kasu and miso mixture or a shoyu mixture. The yamaimo paste is often served with pickles or pickled seafood on top.

    I eat these dishes regularly at home.

    B3 & 4 are pickled vegetables, tsukemono.
    B4 is shibazuke and B3 is probably nozawana zuke.

    B1 looks like Thai curry to me…
