

Dry brined overnight and then grilled. That's the elk on the top and the bison on the bottom. Ribeye wasn't a tomahawk.
Lots to work on here so I would love suggestions! I have tried reverse searing before but not successfully. I'm sure I goofed a lot up but the texture and taste was out of this world.
BTW, the bison was a surprise hit with my kids, and the elk was incredible and flavorful without being gamey (the kids weren't into that one, though). Ribeye is always king.

How were they? Tried elk and I like it better than mule or white tail. Haven’t had a tomahawk though.

Kudos, these are my 2 favorite meats as well! I just got an amazing haul of various elk parts for the holidays – an entire boneless rib subprimal with the New York attached, a sirloin tip roast, a brisket, and other odd bits like elk liver, kidneys and tongues. They were out of elk hearts but got a bison heart! I’ll order bison next time. Thanks ElkUSA.com!
