Moms a real one, I love oyster in my winter kimchi, so delicious. That’s how my mom did it growing up. Also delicious in kimchi: chunks of fish, whole shrimp, clams, squid, baby octopus(throughly cleaned), any seafood really, the fermentation process “cooks” the seafood just like ceviche, really it’s just denaturing the proteins like acids in citrus do. I’d kill for the mandatory bowl of eggs and bibbimbap after making kimchi using the juices and scraps left in the kimchi mixing vessel right about now.
