Minimal chopping, 20-minute cook time. This extra veggie minestroy is what I make when I want cozy, satisfying, and oh so yummy. Start by sautéing garlic and onion and olive oil. You can use fresh or frozen here. Add white beans, tomato sauce for flavor and broth or stock. You can use chicken or vegetable. Add Italian seasoning and parmesan rind for extra flavor if you want. Bring to a simmer and then stir in your pasta. When that is almost soft, add in some mixed frozen veggies. Stir and season to taste with salt. Add grated parmesan to top and serve up any which way your family likes.

I am finding all kinds of recipes on your site that interests me! I have never had a child and I’m 74 years old. I do have two cats…. Anyway, I love your site and your ideas of getting the veggies in to the rest of the food. Thank you so much for sharing all this. I particularly like when you made your mirepoix smaller so has to be not as noticeable I guess for the kids. I think that’ll work well for me also.❤
