Shaved Green & Yellow Zucchini Salad

Ingredients

1 green zucchini

1 yellow zucchini

1–2 tbsp olive oil

½ tsp dried oregano

½–1 tsp chaat masala (to taste)

2–3 cheese slices (mozzarella/cheddar/any melting or soft cheese), cut into thin strips or small pieces

A pinch of red chilli flakes

Salt to taste

Optional: a squeeze of lemon, toasted nuts/seeds for crunch

Instructions

Shave the zucchinis:
Use a vegetable peeler to make long, thin ribbons from both zucchinis. Place in a large bowl.

Season:
Drizzle with olive oil, sprinkle oregano, chaat masala, chilli flakes, and a little salt.

Add cheese:
Slice or tear the cheese slices into thin strips and mix gently with the zucchini ribbons.

Toss gently:
Mix everything so the ribbons are lightly coated with oil and spices.

Finish (optional but great):
Add a squeeze of lemon for brightness or some toasted almonds/sunflower seeds for crunch.
